Recipe: Peanut Satay Sauce

Truly, everybody loves the authentic Indonesian vegetable dessert dish call Gado Gado. Gado Gado is a wonderfully light vegetable dish from Malaysia / Indonesia that doesn’t follow any fixed recipe. Its ingredients consisit of any leftover vegetables ranging from beans, cabbage carrots, beansprouts, cauliflower, cucumbers and even hard boiled egg. What else? What is Gado Gado without the truly irresistible Peanut Satay Sauce (aka Sambal Kacang in Malay)?!
For those who haven’t tried the Peanut Satay Sauce, it’s a definately die die must try!! It’s rich, thick peanut sauce is filled with the aroma of roasted peanuts with a zest of lemon sauce in it. Giving you a heavenly enjoyment to your favourite meat and dishes. No wonder my friend from Philippines got addicted to the Peanut Satay Sauce!! Usually the Peanut Satay Sauce goes along with a dish called Satay. It’s a Malay version of Kebabs where you have either sliced Chicken, Beef or Mutton meat on long wooden sticks and BBQ over the flaming charcoal.

*Hints* If you are planning to have Satay for your BBQ, soaked the wooden sticks with water before placing it over the flame to prevent the sticks from burning!!
The Peanut Satay Sauce goes well with… almost everything from meat to vegetables!! It’s a sauce which is so versatile to use with your favourite dishes and compliments the flavouring of it, giving it an authentic Asian taste.
Ingredients:
- 2 teaspoon of peanuts (unsalted, rosted)
- 1 x shallots
- 1 garlic clove
- 6 tablespoons of coconut milk
- 1/4 cup of peanut butter
- 2 tablesspoons of peanut oil
- 1 teaspoon of sugar
- 1/2 teaspoon of Chinese chili sauce
- 1/4 teaspoon of ground cumin
- 1/4 teaspoon of ground coriander
- 1/8 teaspoon tumeric powder (optional)
- 1 teaspoon of lemon or lime juice (optional)
Directions:
- Mince the peanuts in a food processor and set aside.
- In a food processor, mince the shallot and garlic.
- Add all the remaining ingredients except the peanuts and
process until completely smooth, about 20 seconds. - If you want a little deeper color, add the turmeric and blend
again. - The sauce should be as thick as very rich cream.
- Transfer to a small container to store.
- Sprinkle nuts and add a teaspoon of lemon or lime juice over sauce just before serving.
Note:
- Sauce must be use within 3 days.
- Satay sauce should always be served at room temperature.
- If it has been refrigerated, bring to room temperature and stir vigorously.
- You may have to add a little peanut oil or water to thin the sauce.
